This recipe is from my article All About Kiwifruit. Serve this with a meaty grilled fish such as swordfish, grilled poultry or roasted pork.
- 4 kiwifruit, peeled and cut into 3/8-inch dice
- 1 teaspoon minced red jalapeno or other fresh hot red pepper
- 1 tablespoon tequila
- 1 tablespoon freshly squeezed orange juice
- 1 tablespoon chopped mint
- Pinch salt
Combine ingredients and chill 30 minutes to 1 hour. Serves 4.
